I make this meal about every 6 weeks or more! Even my can-be-picky toddler always asks for seconds of this meal. I use the same recipe for all my meatballs and just tweak the flavours a bit. Mix your ground beef, quick-rolled oats, eggs, milk and garlic seasonings together. Line a baking sheet with parchment paper and place meatballs on it and cook for about minutes or until no longer pink in the middle. Grandma started her amazing meatballs by soaking some Italian bread in cold water. Some simple white Italian sandwich bread works perfect. Other recipes instruct you to soak the bread in milk.
I tried that and it messed with the flavor. When bread is soaked in liquid, it releases the gluten. The gluten wants to bond to a portion. When soaked in water it bonds with the protein in the meat, keeping the flavors of the meat in the meatball. This makes for a delicious meatball! When soaked in milk, it bonds with the protein in the milk instead. It is really important to the flavor of the recipe that you use both ground beef and ground pork. Pro Tip! If you are only able to find a 1 pound package of ground pork, divide it in half and freeze the other half.
It will freeze well for up to three months. I always use clean hands to mix up the meatball ingredients. You want to mix until they are just combined. No need to over mix. This is the cookie scoop I have. I love it. There are three different ways you can cook your meatball recipe.

These have quickly become a new family favorite and have made it to my recipe book! We fry them in a cast iron! Almost the same as mine. They are most excellent. I do the first method and also hate frying. I use unbleached parchment paper on my baking sheet. A few more fresh herbs.

This is how I make mine. I use beef, pork and veal… I think the veal helps in the tenderness of the meatball. Not true. I bake mine at degrees for 20 minutes and they are very brown and crisp on both sides.

When we returned to our respective cities at the end of the summer we did the duty of schlepping back and forth via BoltBus in the name of Young Love. Which is a terrible idea because Philadelphia and New York are jusssst close enough that you think you can get away with a quick hour round trip, but in practice that requires more sleep deprivation than is acceptable for a day of long rehearsals.
